Day 19: How to Make Vegetarian Taco Salad

I'll just be honest here and admit the original recipe isn't mine. I got it from my aunt, and it's quickly become my favorite food other than artichokes. I have modified it a little, though! 
Here's what you'll need:
- 1 package Lightlife Gimme Lean Meatless Sausage
- taco seasoning and Nature's Seasoning to taste; I coat almost all of the sausage in taco seasoning and add one shake of Nature's Seasoning for reference
- 1 can tomatoes with medium heat chilis; I use Muir Glen, but you can use Rotel
- 1 can garbanzo beans
- 1 can black olives
- 1 package lettuce of your choice (not shown; I use spring mix)
- 1 avocado (not shown)
- crushed tortilla chips of your choice (not shown; I use lime tortilla chips for added flavor)
- 1-2 tablespoons of mayo
- 1 tablespoon taco sauce
- jarred jalapenos (not shown)
And now, onto the yummy goodness!
Step 1: Brown the veggie sausage (sprinkled with taco seasoning and a dash of Nature's Seasoning) in a dry skillet for a few minutes. Don't worry about it sticking to the bottom, as the yummy crispy bits will add texture.
Step 2: Add the canned tomato mix. Cook the sausage through until your spatula passes through the sausage without sticking to it (roughly 10-15 minutes).
Step 3: Add your drained chickpeas, jalapenos, and olives to your salad. Slice the avocado and add to the top.
Step 4: Mix your mayo with your taco seasoning and add to the salad.
Step 5: Crush up tortilla chips in a plastic bag, sprinkle on top of salad.
Step 6: Add your veggie sausage while it's still warm and mix all the ingredients together.
Step 7 (optional): Eat with soft tortillas to make veggie soft tacos.
Total time: 25-30 minutes.
Serves: 5-6 people
